Bonnie's has been open since 1984. The original owner, Bonnie Cobb, owned and operated the restaurant for 30 years until she sold it to her niece Elizabeth and (Elizabeth's now husband) Edward in 2014. Since then,  Lizz and Ed have been running the business - making some changes to include a more local flavor to both the menu and the decor.

Liz and Ed met at SUNY Delhi in the Culinary Arts program. Ed was a member of the hot food team that won a ACF national championship in 2012. After college they moved to Maui, Hawaii where they worked at sister restaurants creating local fine cuisine for visitors to the Island. A year later, they returned to New York to be closer to family and started working at a Country Club in Magarettville, NY. A few months later Bonnie reached out to see if they knew anyone looking to buy a restaurant and they decided to take the leap! Lizz and Ed took over December 1, 2014 and slowly started making everything in house. Today almost the entire menu is made from scratch and includes many locally grown ingredients. They proudly serve fresh baked muffins, breads, rolls, and bagels in a variety of flavors;  as well as fresh ground beef patties, pork sausage, and corned beef hash. They create daily breakfast and lunch specials,  and a variety of desserts including pies, cookies, donuts, and cheese cake. Bonnies continues to expand their menu
